BOULDER and FORT COLLINS — The Waffle Lab, a Fort Collins-based restaurant that specializes in Belgian-style Liege waffles, plans to expand to Boulder.
The expansion was announced on The Waffle Lab’s Facebook page, with the new site located at 1155 13th St. on The Hill, a student-oriented neighborhood near the University of Colorado Boulder campus. A date for the opening was not immediately available.
“University of Colorado Boulder we are coming for you,” the company announced on Facebook March 5. “We’ve signed the lease and begin construction next week.”
The Waffle Lab’s Fort Collins location is at 130 W. Olive St. in Old Town. The restaurant was founded in 2012.
Liege waffles are made with yeast-leavened dough and imported Belgian pearl sugar. The company’s website features everything from chicken waffles smothered with sausage-rosemary gravy to a variety of chocolate-covered waffles.
